The Kun Tao Silat system I practice is heavily knife oriented, but we also practice stick, staff and flexible weapons (i.e, sarong, rope, etc.)
Stay far away from Shaolin-Do; these folks are beyond dodgy. Most Okinawan and Chinese styles will include weapons training, but more often do so as a complement to empty hand. Jujitsu is probably not a good choice, but Japanese weapon arts are. I don't know if you have a Kendo association near you, but they might have pointers for where to look at if you're looking for Jodo (well, the Canadian Kendo Federation does also cover Jodo as well as Iaido, so your local Kendo might as well). FMA and Silat are hard to find, but they usually work the opposite than Chinese and Okinawan styles; open-hand is taught as a complement to weapons training.
When I took Arnis de Mano, the empty hand and kicking techniques were stressed much more than weapons, unfortunately. Probably just peculiar to the particular school. -Mark
