I think he snapped his arm so easy because he had what 30 lbs. extra of muscle on Nogera. Mir was clearly stronger in the fight and I dont think he really snapped it on purpose, he just simply overpowered a more skillful fighter.
What Mushroom said but also Mir readily admits he doesn't wait for a tap. He aims to put you to sleep or break whatever he's holding and if you tap in time to save yourself then good for you. That's the way it should be really.
I think I'd probably vomit if I broke someone's limb like Mir has (twice). I've come to the conclusion I can't watch MMA live just in case I see something like that. I've never watched Gonzaga KO Cro-cop because I know CC falls funny on his leg for example.
