There are a few general details. Their Muay Thai program is easier to judge, but probably not what the OP is interested in. Simo Cookie Vassiliou is pretty well-respected in Oz, and the club hosts seminars with Guro Inosanto pretty much every year. another vote for option 2
I would go for the second option as well if I had to chose. First one is indeed way over the top commando special forces mumbo jumbo that has little to do with actual silat training but probably more KravMaga like. Third one is also not very informative about it's silat. Second option by Dan Inosanto probably will be a mix of several styles (Silat with JKD aspects and Escrima or in any other order). If you want to train a more traditional silat style i would say..... none of the three.....
