Most judo clubs wont allow sparring with leg grabs now.

Yes you will learn randori (rolling is a very bjj specific term)

    Ps are you training yet?

They have Wrestling too I believe. The coach was on his national Greco Roman team apparently but he may have moved on now.

Because of the nature of the rules, wrestlers take a low stance that is square and aim to protect the hips. This means the wrestling takedown is what it is...knee down, penetration step...going in lower. When the opponent is not as low, you don't have to go low either, so a classic penetration step is not always needed.

The knee to the floor and penetration step is a legit way to takedown but for real world fights or SD you do have the problem of hurting your knee and simply not needing to go so low. This is where morote gari comes in.
In mma some of the best takedown guys, like George st Pierre and fedor, if you analyse it, don't use the penetration knee to the floor takedown as much as might be expected. Morote gari , or a tweaked variation ,works great in mma and for SD.
It's not to take anything from the wrestling takedown either as that is worth trAining.

Various standing versions exist in wrestling as well, that's where St Pierre learned his.
