    Empanadas

    Empanadas

    There are 2 versions of this dish. One uses hamburger
    and the other is vegetarian. The veggie version is
    tastier.

    Ingredients:
    1/2 cup pitted green olives, coarsely chopped
    1/2 cup pitted black olives, coarsely chopped
    1 med yellow or white onion, coarsely chopped
    1 tsp cinnamon
    pinch salt
    pinch black pepper
    several slivers of ginger
    2 tbsp butter or olive oil
    1 can Grands(TM) Biscuits

    Optional:
    1/2 lb lean ground meat

    ----------------------------------------------------
    [If using ground meat, reduce the amount of olives slightly
    and brown the meat before continuing.]

    1. Saute onions in oil on low heat until transparent.

    2. Add remainder except biscuits and heat until slightly limp.

    3. Split each biscuit horizontally into 2 rounds.

    4. Stretch and flatten each round slightly, then place
    about a teaspoon of the filling in the center.

    5. Fold over and seal edges to form a crescent.

    6. Bake according to can instructions.

    Rice Pudding

    Easy Peasy recipie to make this..

    Ingredients

    50grams/2oz of Rice
    50 grams/2oz of Sugar
    1 pint of Milk
    A sprinkle of ground nutmeg

    1. Place the Rice and Sugar into an overproof dish
    2. Add the milk, stirring as you add it
    3. Sprinkle the nutmeg on top
    4. Place in the oven on gas mark 2 for one and a half hours, stirring every 30 minutes

      I use full cream milk, because its nicer, but you can use any kind you like.

      If its a bit sweet, cut down the sugar to 25 grams/1oz instead, or add more when its cooked.

      If its a bit thick (depends on the rice) add some milk when serving and reheat it a little.

    Knight's mom's cheesy vegetable scones.
    Chop onions. Chop peppers. Chop any vegetable you think would go, like leeks. Not too much. about 3-5 vegetables will be plenty. As you gain proficiency, you should be able to judge how much you want for yourself. Put em' all into a big mixing bowl.
    Add 8 tablespoons of wholemeal self raising flour and 8 tablespoons of white self-raising flour. Mix well. Mix in two eggs and enough milk to make it into a dough. Add the milk SLOWLY, as it is difficuilt to judge.
    Make the scones into little round cakes
    bake in the oven at 200 degrees C until they are scones. It doesn't take too long.

    Raspberry and White Chocolate Waffle Pudding

    480g (about 14 waffles)
    300g raspberries (500g if using frozen)
    200g good quality white chocolate, chopped
    1/4 cup caster sugar
    3 eggs
    1 tbsp plain flour
    1 tsp grated lemon rind
    1 tsp vanilla extract
    500ml thickened cream
    2 tbs icing sugar, to dust

    Preheat oven to 170. Butter a medium oven proof dish. Cut waffles into 2cm cubes. Place half in the dish, topped by half the raspberries, then half the chocolate. Repeat layers. Whisk together sugar, flour, egg, rind, vanilla and cream. Pour over waffles and set aside for 10 minutes.

    Bake in the oven for 35 minutes until golden. Dust with icing sugar and serve with cream or ice cream.

    Moist Banana Cake

    250g soft butter
    1 cup castor sugar
    3 eggs
    3-4 over ripe bananas, finely mashed
    2 cups self raising flour

    Cream the butter and sugar in a small bowl with an electric mixer until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in bananas, then sifted self raising flour. Pour into a well greased baba or ring pan, bake at 180 for about 45 minutes. Stand for a few minutes before turning cake onto wire rack to cool.

    Mashed Potato Pizza

    This is a KC favorite ...
    I promised Chazz I would post it

    Mashed Potato Pizza [​IMG]

    2 cups (95 g) leftover mashed potatoes or instant mashed potato flakes
    1 (8 ounce)/(225 g) package shredded Cheddar cheese, divided
    1 (3 ounce)/(85 g) jar real bacon bits or strips of bacon
    1 bunch green onions, chopped
    pizza crust dough (you can make from mix or buy the dough in a bag at the store or a pre-made crust)


    Preheat the oven to 425 degrees F (200 degrees C).

    Roll out the dough and place on to pizza stone or pan. Rolling up the edges and tuck for crust. Lightly brush entire area with olive oil and salt & pepper (you can even sprinkle with garlic powder)
    Bake for 4 minutes in the preheated oven, until about halfway done.
    Prepare instant mashed potatoes according to package directions or warm up the leftover. Stir in half of the Cheddar cheese, bacon bits, and green onions. Spoon the potato mixture over crust. Sprinkle the rest of Cheddar cheese over the top and bacon strips if you are using. (actually you put anything on top even veggies like brocolli!)!)

    Bake for an additional 5-10 minutes in the preheated oven, until crust is golden, and cheese is melted. Let cool for 5 minutes before slicing and serving. Top with sour cream to taste.

    Chocholate Caramel Cheesecake

    This recipe can be made 2 days ahead.

    2 ½ cups (250g packet) plain sweet biscuit crumbs
    140g butter, melted
    FILLING
    250g packet jersey caramels, chopped
    3 teaspoons water
    2/3 cup thickened cream
    2 x 250g packets cheese cream
    2 eggs
    CHOCOLATE TOPPING
    125g dark chocolate, chopped
    60g unsalted butter, chopped

    Lightly grease a 3.5cm x 24cm flan tin
    Combine biscuit crumbs and butter in bowl: mix well.
    Press crumb mixture over base and side of prepared tin; refrigerate while preparing filling.
    Place tin on oven tray, pour filling into crumb crust.
    Bake in moderately slow oven about 50 minutes, or until centre is just firm; cool.
    Spread topping over cheesecake, allow to set at room temperature.
    If desires, decorate with fresh raspberries and icing sugar, and serve with extra cream.

    Filling: Combine caramels and water in pan, stir over heat until caramels are melted; cool slightly. Stir cream into caramel mixture. Beat cheese in medium bowl with electric mixer until smooth, beat in eggs one at a time. Add caramel mixture, beat until smooth.

    Chocolate topping: Combine chocolate and butter in heatproof bowl, stir over pan of simmering water until melted and combined; cool slightly.

    Serves 6. Not suitable to freeze. Caramel mixture and chocolate topping suitable to microwave.

    "KC" Holiday Fruit Cake

    "KC"'s Holiday Fruitcake Recipe

    1 C Water
    1 C Sugar
    4 Large eggs
    3 C dried fruit
    1 tsp. baking soda
    1 tsp. salt
    1 C Brown sugar
    Lemon juice, nuts
    1 FULL bottle of your favorite whiskey

    Sample the whiskey to check for quality.

    Take out a large bowl.
    Check the whiskey again to be sure that it is of the highest quality.

    Pour 1 level cup and drink. Repeat.

    Turn on the electric mixer; beat 1 C of butter in a large fluffy bowl.
    Add 1 tsp. sugar and beat again.

    Make sure the whiskey is still OK.

    Cry another cup. Turn off the mixer.
    Break two geggs and add to the bowl and chuck in the cup of dried fruit.
    Mix on the burner.
    If the fried fruit gets stuck in the beaters, pry it loose with a screwdriver.

    Sample the whiskey to check for toxisisticity.

    Next, sift 2 cups of salt.
    Or something. Who cares? Check the whiskey.
    Now sift the lemon juice and strain your nuts.

    Add one tablespoon of sugar or something...whatever you can find.
    Grease the oven. Turn on the cake tin to 350 degrees.

    Don't forget to beat off the turner. Throw the bowl out of the window.

    Check the whiskey again. Go to bed.

    Who the hell likes fruit cake anyway???

    LOL! But I really do like fruitcake! And I make homemade fruitcake (there are two favorite recipes I use). "Checking the whiskey" is funny, though -- reminds me of something we do in my family -- when we want to eat something that we're not supposed to touch (yet), we say "But I have to taste it, to be sure it isn't poisoned!"

    BTW, homemade fruitcake is greatly improved by liberally basting it every week (you make the fruitcakes about six weeks before you intend to eat them). What to baste with? Some people like rum; I prefer strong Italian brandy! This would probably work on store-bought fruitcakes as well. Don't eat a slice of this cake if you plan on driving within a couple of hours. ;)

    Since you live in the UK I'm not going to assume I know what it is you Brits call "chili sauce". For all I know you might be referring to ketchup.

    Ok, so I will assume I know... I think you mean a sauce made from roasted chili peppers. There are about 1000 variations but here is a good one I like.

    Green Chili Sauce
    8 tomatillos (if you can't get these stop here)
    2 lg white onions
    4 roasted jalapeno peppers
    2 red or yellow bell peppers
    2 mild chilis (poblano or anaheim or similar)
    4 cloves garlic, minced
    1/2 tsp ground cumin
    1 tsp paprika
    2 cups chikcen broth
    salt to taste
    2 tbsp olive oil

    If you have a gas range, flame the chilis using a pair of tongs until they are warmed through - they should have blackened spots on their skins. You should be able to remove their skins easily if you have grilled them enough.
    Chop the tomatillos, onions and peeled chilis to a small dice. Mince the garlic. Sautee all this in the olive oil until the onions start to go clear. Use generous portion of salt. Add the spices and mix well. Add the water (or broth) and simmer fo 30 minutes or longer. Adjust taste using salt and black pepper. If it turns out too bitter or tangy add a small amount of sugar and/or roasted sesame oil. Be very careful with roasted sesame oil it has a very string flavor and 1/4 tsp might be too much.
