I see this in all sorts of big fitness thing and I always thought it was a stupid idea. But I watched a dvd on Jackie Chan and it's part of his routine. So how exactly does hanging onto a bar or something and repeatedly being punched in the stomach help?

Conditioning.
gets the body used to taking a hit. Kyokushin guys do it ALL the time

As far as Im aware, if you feel enough pain from something then you no longer fear it. So take enough beatings in training and you wont be worried about getting hit in a fight or tournament.

We used to do this in MT a lot. We would take it in turns as a pair to slowly increase the strength of the punches until the 'victim' would say no more or was obviously winded. Then we'd swap :)

It definitely helped, aside from the psychological knowledge of knowing what you could do there's also a physiological advantage in that your abdomen muscles are more likely to fire when there is an apparent threat, as opposed to exercise movements like crunches or leg raises where your muscles will do as much as is needed and no more.

Plus it's nice when you can take all that they can give with a smile on your face as they quit before you do :D

drop sand bags or big medicine balls on your self when your doing sit ups and crunches feels really good
