I rarely eat much vegetables, maybe 2 portions a week but I love fruit, I eat plums, nectarines, grapes, cherries, bananas and a few other exotics and I drink pure mango juice with no additives etc.

I easily eat 5+ portions of fruit a day. Is this ok or should I be trying to balance it out with veg?

My typical days diet involves..

Breakfast
Cereal with wholemilk + ham sandwich + 1 plum + 1 nectarine

Snack
Ham sandwich or 2 + grapes, cherries, 1 plum or nectarine

Dinner
Baked Beans with sausages on 3 pieces of toast + 2-3 pieces of fruit

Snack
Ham sandwhich or 2 + more fruit

Tea (2 hours before bed usualy)
Chicken noodles with about 100g of corned beef + more fruit

Sometimes I substitute any of those meals with chicken and rice or something similar, and sundays I like to make a roast which is where I normaly get my veg with carrots, peas and potatoes.

Sunday roast normaly lasts for a meal on monday too. And each meal I eat is about 30g protein

Is all the fruit I eat a valid substitute for veg?

Well I want to stay the same weight but build more muscle, as I have a little fat

I weigh 220lb

I'm more interested in general health that full blown beef cake look.

I weight lift once a week and do circuits, tabatas, gymnastics, jujitsu, running, and cycling most other days.

No, you could try smoothies and hide some veg in them.
Green veg is where it's at, salad?

A lean 220lbs is pretty much a beefcake! It would be best to lose the fat then concentrate on adding muscle, you may find you're happier at the lighter, leaner weight.

Most people prefer fruit to veg, just because they generally contain more sugars. Green veg is great for adding food without adding too many calories, and stuff like broccoli, spinach and nettles are packed full of vitamins and minerals that are really important for general health. It's good to aim for something like a 2:1 ratio of veg to fruit, including plenty of green leafy veg and less of the starchy potato kind.

Best thing you could do for yourself , is to back off on those processed meats a bit . I bet you'd be surprised at how much extra saturated fat you're getting from ham twice a day , with corned beef and sausages.
