I'm just getting worn out. I load semi-trailers at UPS for 5 hours 5 days a week and on 3 of those days I got practically straight from work to the gym where I train for 2 hours. Then on saturdays I go train for 3 hours.(well I just switched from Karate to MMA but my old Karate schedule was similar)

The day after I have work + a training session I am just beat. I do ok at work but still really feel it. What sorts of foods should I focus on taking in to keep my energy levels up? Any other tips?

Take a Super Multi vit, something that is designed for active lifestyles, that should get you started, make sure you are getting enough water, the number one cause of fatigue is a lack of water. Try snacking on bananas and stuff before the workout... Even if you are hella busy try taking 5-10 minutes off before doing something, 10 minutes of relaxation or just thinking about things, or calling someone talking to them can get you really refreshed, a cup of coffee, meditation, read a small article, self massage, a quick shower, I always find a shower really wakes me up!

a quality sleeping pattern with a minimum of 8 hours

2 litres water minimum for non training days
3 litres water for training days

cut out crap like burgers, chips, any junk food... they bloat you out and make you feel sluggish.

if you smoke, pack it in...

eat little but often so your not stuffing all your daily intake into 3 meals

supplements are the last resort, not the first :p :D
