Jackie Chan is supposed to have studied quite a lot of it at some point, though obviously if so it's just one of many things he has incorporated into Movie Fu.

Jin Pal Kim was a Hapkido instructor who went to Hong Kong,opened a Hapkido studio,and became a Hong Kong actor and teacher.
(Chan Hung,Mao were some of his students)

I've liked seeing the work of the following masters on film:

Han Bong-Soo (Billy Jack)
Ji Han Jae (Lady Kung fu, Fist of Unicorn and Game of Death)
Phillip and Simon Rhee (Some of the later Best of Best movies feature more hapkido)

I recently saw "Blade Warrior" with Jino Kang which features IHF style hapkido which is quite interesting.
