This month's issue of Journal of Asian Martial Arts (vol 15, number 3, 2006) (see http://www.goviamedia.com/) has a great article on Shinmoo Hapkido's Dan Jeon Breathing from a more theoretical point of view (less emphasis on the physical "how and what"). It's well worth checking out.

Along similar lines, how much DJB does your school do? How deep does your school get into the ways of doing it and the interconnectivity between organs, altitude, and times of day?

actually i've seen this in two different martial arts schools.

My Hapkido teacher (Jointlock) teaches this in ShinKoo Hapkido

But back in my Taekwondo school we were told to work on it for lung capacity for sparring as well.

we almost do it every lesson ; we practice 6 different forms... forward (2 hands), sideways... etc.
i also do it multiple times a day, when it crosses my mind, I try to put in some exercises - to avoid looking like a complete dimwit, I do it when I'm left in my classroom alone, 5 minutes for the next batch of kids to come in... :D
