This is a bit vague, but whats the best thing to do if someone attacks you with a knife?

No, really.
Or you could try finding a good Fillipino Martial Art, these seem to have the most realistic approach to knife defences.

not been teaching any knife in the MMA class but it will be in the stick class ( when I get a hall ;) )

Time to run like hell!! There are a few knife defenses i've been taught, but I don't trust myself with clearly communicating the precise movements to execute them. But I do trust myself with telling you this... if someone pulls and knife, and you CANNOT escape, Crescent kick to the hand holding the knife will hopefully knock it out of their hands (this is one of the crescent kicks valuable functions, knocking this out of peoples hands, tried it once on someone who was holding a glass bottle. the bottle went flying) or if you can acquire an enviromental weapon (i.e. a two-by-four, chair, etc, or just get a really big ****ing stick) but overall i'd reccomend my first statement, run like hell.
The real thing to remember is: When you come across a truly good knife fighter that wants you dead, you'll never actually see the knife.
