Has anyone studied any Madurese styles of Silat?
If so what are the main characteristics or 'flavour' of the style?
I possibly have the opportunity to study in Indonesia with a friend of my wife's family next time we're over there.
I'm not sure if the style is Pamor or not. I just know the guy teaches Madura style at the moment.

Just to prevent confusion:
One of the styles from Madura is Pamur and not Pamor. Pamur is an abbrevation of Pencak Angkatan MUda Rasio and its founder is Raden Hasan Habudin.
This should not be confused with Pamor, which is a style that originates from east Java.

Joko Tole is an original Madura silat also.
You may spell the 'T' from Tole like Indian, Balinese and few Javanese people do :)

So here it is folks!
We usualy make the stock from leftover roast chicken, just because we usualy have some leftover!
So stock, Chicken wings, bones, feet whatever you want really, if you're feeling rich use a whole one. Boil it up with water & lime leaves & lemongrass. If you want add a stock cube too. We use gallo oraganic stock cubes. They are very 'Chickeny'. Don't know what you have in the US. Masako if you're in Indonesia.
Strain off the stock & keep it to one side, pick the meat off the bones.
Spice Paste. Garlic, galangal, ginger, kencur(if you can find any!), white pepper, turmeric-fresh if you can find it , otherwise powder, little red shallots, salt.
Mash this up in an ulak ulak, or maybe blitz in a blender.
Fry this good & proper in some oil in a large saucepan. Fry until it is cooked through.
Add stock to this and simmer for 20-30mins. Add some oriental celery leaves if you can find any. If not coriander leaves are OK but not totaly authentic!
Meanwhile.
Fry the chicken meat in some oil and shred this.
deep fry some finely sliced shallots until crispy.
Steam some red chillies and mash up with a bit of salt and lime juice for sambal.
Slice some tomatoes.
Chop up a few spring onions(scallions in US?)
Chop a few oriental celery leaves.
Boil some eggs, peel and slice into halves.
In a deep bowl add rice, then shredded chicken, tomato, boiled egg, ladle some piping hot stock over this.
Put a dollop of sambal on the top.
Sprinkle over celery leaves, spring onion, and crispy fried shallots.
Serve with a slice of lime and squeeze this over the top. Kecap manis if you want too!
And there you have it. You can now eventualy eat.
That's gotta be the words most complicated soup!
