I am looking for books and compendiums about myths, legends, folk tales, and fables from various cultures and countries around the world.
For example:
Old Man and the Roasted Squirrels (http://www.ocbtracker.com/ladypixel/oldsqui.html)
The Gold Colt and the Fire Dragon Shirt (http://www.pitt.edu/~dash/china.html#goldcolt)
Any and all suggestions are appreciated.

I just got done with "Outlaws of the Marsh". I don't know if that qualifies under your criteria but it ceratainly was a fun (and long read).
There are several on the Dreamtime, which is the Aboriginal mythology. Its quite a wonderful mythology too.

Lady Gregory's, Irish Myth and Legends (as well as Cuchulain of Murithene). Howard Pyle's books on Arthurian legends, anything by Andrew Lang. Evangeline Walton's retelling of the Mabinogi. Pantheon Press has a real nice list of titles covering, Celtic, English, Chinese, African. Pantheon Press is a printing arm of Random House (I don't think it's up and running anymore) here's a link to the Random House site,

You have to scroll around to find the books as it seems they are lumped in with other titles.
