Low volume high intensity does rule, but what if you have to do some work on the days when you're not training? I ask this because I was carrying logs to build my mates house which made my shoulder very sore and it occured to me if I do this day after day at high intensity is it dangerous?

Yes it is.
Anything done at high intensity / high volume carries a high risk of injury.

So is it safe to do high intensity work at the same time as low intensity stuff e.g. work

If "work" is low intensity then yes.

I'm talking about digging vegetable plots etc.

That's gotta be classed as low intensity - basically if you can do it for an extended time then it's low intensity.
Obviously you need to listen to your body & use your brain.
If you KNOW that you have 8 hours digging to do tomorrow then a HIT routine including squats & deadlifts probably isn't a good idea the day before.
What exactly is low intensity and high intensity work?

Examples....
Low intensity - a 5 mile steady state run in say, 45min
High intensity - 6 x 100m sprints with 30sec recovery
Low intensity - Leg extentions 3x20reps with reps with 50% 1RM
High intensity - Free weight Squat 1x20reps with 85% 1RM
*1RM = 1 Rep Max
